We are putting new ac in our shop and trying to figure out how much output or size of unit we need

By shop do you mean store or a work shop in or attached to your home?

The first thing I would say is that properly sizing the system is part of doing a proper installation. It can also be a relatively complicated thing to do and critically important that it is done right so you receive the highest efficiency and fewest problems from the system.

To get a general sense, you can look at the chart here: http://www.acdirect.com/systemsize.php and you can use the calculator here: http://www.northernac.com/newcalc.htm.

To keep legal happy, let me just say that I am not an HVAC contractor, and you should never even look at your furnace without having a qualified, liability accepting HVAC contractor present.  To keep sales happy, let me just say that you can find an HVAC contractor that's happy to take your money here: http://www.furnacecompare.com/perl/find_contractors.pl.
