It could also be mold build up. This can happen during the winter when the AC unit is not being used and condensation, such as in a condensate drain pan, gets moldy and then as the weather warms it becomes worse so when the AC comes on it gives off an odor.
Also, is it a burning or electrical smell? If so you should shut it down and call in a certified HVAC tech to check it out because it may be an unsafe situation.
